Chef de Partie

Salary – 21k to 26k

As a Chef de Partie you will prepare much of the food that comes out of the hotel’s kitchen.  Part of the kitchen brigade, you will normally work under the supervision of a Sous Chef or Head Chef and will be assigned a particular place on the line, such as the vegetable prep area, range or grill.

Your duties and responsibilities as a CDP are made up of varying responsibilities and include:

  • Managing a section of the kitchen 
  • Setting up the kitchen prior to service
  • Preparing a particular kitchen station by bringing all food containers to that point in the line
  • Assisting with marinating, cutting and precooking foods 
  • Preparing, cooking and presenting dishes to a high standard and complexity
  • Plating food attractively to company standards and maximising customer enjoyment
  • Monitoring portion and waste control to maintain profit margins
  • Wrapping unused items and storing them in proper areas at the end of a shift
  • Cleaning and sanitising your area with warm water and soap
  • Cleaning the kitchen before the restaurants close

Commis Chef

Salary – £10 per hour

Main duties of a Commis Chef

A Commis Chef assists a section chef, also known as a Chef de Partie. The role is made up of many varying responsibilities including:

  • Assisting in the food preparation process
  • Cooking and preparing elements of high quality dishes
  • Preparing vegetables, meats and fish
  • Assisting other Chefs
  • Helping with deliveries and restocking
  • Assisting with stock rotation
  • Cleaning stations
  • Contributing to maintaining kitchen and food safety standards.
  • Kitchen Porter duties as required

Sous Chef

Salary – 24k – 28k

As Sous Chef you will work as the second to the Head Chef with duties including deputising in their absence to lead the kitchen brigade, guiding and supervising the junior kitchen team members during food preparation and service and taking responsibility for every plate that leaves the pass.

Your duties and responsibilities as a Second / Sous Chef are made up of varying responsibilities and include:

  • Report to the Head Chef and deputising in his absence
  • Document what the Head Chef requires before the preparation of the day’s dishes
  • Ensure consistent and smooth running of food production
  • Ensure effective stock purchase, receipt and storage
  • Ensure that working areas are always kept clean
  • Ensuring all food products to be prepared are fresh, in date and not expired
  • Assist the Head Chef and ensuring they have everything they require during food preparation and service
